BEHIND THE APRON
Canteenwalla brings almost three decades of culinary expertise and industry leadership to the table.
His formal training began at the prestigious Institute at St. Denis in Montreal, but his love for food started in childhood and took him on a journey worldwide in search of unusual flavours and new culinary techniques.
Over the years, Canteenwalla has served as executive chef at some of the most distinguished hotels and restaurants across the globe, including the Four Seasons Hotel in Toronto, Raffles in Singapore, Le Royal in Cambodia, Grand Mirage in Bali, Le Meridian in Dubai, and the Royal Garden Group in Bangkok.
In the US, he served as executive chef of the MGM Grand in Las Vegas. He later became the executive chef and managing partner, along with Blau. Canteenwalla’s culinary creations have garnered worldwide acclaim thanks to his love for fresh and exciting flavours and unwavering passion for the kitchen.
