FLAME-CHARRED BARRELS

The process starts with the meticulous selection of American oak barrels, previously used for Bourbon maturation, which are then flame-charred to a precise level 4 intensity. OLOROSO CASK FINISH
But what truly sets Glendalough’s Double Barrel Irish Whiskey apart is the finishing process. After 3½ years in the ex-Bourbon barrels, the whiskey is transferred to specially sourced Oloroso casks from Montilla, Spain—a small town in the country’s rolling southern hills. Here, the spirit undergoes a secondary maturation of 8 to 12 months. The Oloroso casks—carefully chosen from a bodega known for its expertise—impart deep, layered flavours that elevate the whiskey to new heights. Rich notes of dark fruit, cherry, raisin, and fig mingle seamlessly with the hints of agave, butterscotch, and peppercorn, creating an extraordinary balance of sweetness and spice.
