Dockside’s culinary team draws on fresh, local, and seasonal West Coast ingredients layered with multicultural influences, a style that suits a restaurant perched at the edge of Granville Island, with the Public Market close enough that the kitchen restocks daily from a few metres away. That proximity can be recognized in everything that leaves the kitchen, and in a menu built from the ground up around inclusive dining, where every guest finds a place at the table.

A Menu Without Limits
What stands out at Dockside is the sheer range on offer. Korean glazed cauliflower, its crispy florets coated in a sweet and spicy house-made sauce, shares the table with a roasted beet salad layered with cauliflower puree, pickled pears, seasonal greens, and a maple-glazed walnut dressing. A Dockside Greek salad brings marinated tomatoes, cucumber, pickled onions, kalamata olives, and an oregano vinaigrette, while truffle fries and grilled asparagus, finished with roasted tomatoes and toasted almond slices, round out a lineup built for sharing.
The kitchen goes further still with roasted cauliflower dressed in green harissa and seeds, a skillet of mushrooms sautéed with garlic, and a porcini truffle linguine tossed with garlic, herbs, and vegetables in a rich truffle sauce. A Mediterranean Vegan Bowl piles grilled vegetables, crispy falafel, quinoa, hummus, dolmades, cucumber, donair sauce, kalamata olives, and pickles onto one plate, and the Mediterranean grill platter brings skewers, falafel, house-made hummus, fresh salad, and pickles to the same table.


Dine Where You Please
Part of Dockside’s appeal is how little it asks guests to compromise on setting. An evening might unfold on the restaurant’s expansive waterfront patio, one of the largest in Vancouver, with the marina’s masts catching the last daylight over dinner and cocktails.


A slower morning calls for brunch delivered straight to a penthouse patio, waffles arriving under coconut cream, fresh fruit, a blackberry compote, and a dark and white chocolate drizzle, alongside an avocado toast piled so high with herbs and greens that the toast itself nearly disappeared beneath it, each bite carrying more vegetable than bread. Green goddess shots round out the spread. For a quieter night in, the kitchen sends dinner straight to the suite, proof that Dockside’s dining experience travels wherever a guest happens to be.

Crafted Behind the Bar

Each season brings its own selection of signature cocktails, and during our visit we enjoyed the Hazel Drift, a blend of Frangelico, dark rum, pineapple, coconut cream, lime, and soda that leaned tropical and nutty, alongside the Violet Mirage, layering Aviation gin, Giffard Violette, lychee puree, lemon, and soda into a striking purple pour. The Nature Risen rounded out the lineup with a two-tone build of Amaro Chiaro, peach schnapps, hibiscus syrup, lime cordial, and ginger beer, a bittersweet finish built for lingering over.

Chef’s Table Moments

A few dishes at Dockside arrive as pure showcase. One evening, the culinary team sent out a mushroom and nut risotto, finished with almond slivers and edible flowers, an off-menu creation made entirely at their own discretion. A dairy-free, gluten-free pizza turned out to be thin-crust perfection, delivered with a pair of scissors for cutting rather than a standard wheel, a small but telling detail from a kitchen that clearly enjoys the craft.

From the patio to the penthouse to a quiet night in the suite, Dockside builds its reputation on range rather than restriction, a kitchen equally at home with a classic plate or one reimagined for a different appetite. The culinary team deserves real recognition here, for a menu, and a philosophy, built to satisfy every palate at the table, no matter where in the world a guest happens to call home.
