This rare opportunity brings together chefs from MICHELIN-starred restaurants and emerging culinary talent, offering Canadians an exclusive peek into the future of luxury through unparalleled dining experiences.
The inaugural ‘A Taste of the Future’ event was held at FRILU in Markham, Ontario. This Michelin-starred restaurant, the sole recipient of a Michelin Green Star in Canada for its sustainable practices, set the stage for a groundbreaking collaboration. Executive Chef John-Vincent Troiano of FRILU joined forces with Chef Joel Gray and Hannah Harradine, the innovative minds behind Down Home by Sumac & Salt, for a genuinely unprecedented culinary experience.
A Taste of the Future: Vancouver showcased a collaboration between the Executive Chef and Owner of one MICHELIN Star restaurant St. Lawrence, J-C Poirier, and the Executive Chef and Owner of Montreal’s Restaurant Mastard, Simon Mathys.

The Chefs Behind the Experience
J-C Poirier is originally from Saint-Jerome, Quebec, and has a career spanning over 25 years. He worked at several renowned Canadian restaurants prior to opening his own, St. Lawrence. St. Lawrence was awarded its MICHELIN Star in 2022, which it proudly retained in 2023. Chef Poirier creates a unique dining experience by reinventing traditional Quebecois and French dishes, infusing them with modern flair while respecting their authentic roots.
Chef Simon Mathys has an impressive culinary career, including holding the role of Executive Chef at several prestigious Montreal restaurants, where he has showcased his commitment to sustainability and the culinary heritage of Quebec. He gained notable recognition as Executive Chef at Manitoba, creatively incorporating wild, regional products into his dishes. In 2020, Mathys opened Mastard in Rosemont-La-Petite-Patrie – a restaurant mirroring his culinary ethos and style.
